    Washington generally clears out for the Thanksgiving holiday. Blame it on the younger people returning home and Congress returning to the district. There are still some of us, though, who enjoy celebrating America’s holiday in America’s capital.

    I admit it. I freaked out. My final CSA delivery was last Friday and by Sunday, I was already worried about how I would feed myself—despite having a variety of leafy greens, two kinds of squash, sweet potatoes, broccoli and much more in my kitchen waiting to be cooked. I went to the Dupont farmers’ market and managed to spend every last dollar I had on me. I ended up with 15 apples, four kinds of squash, a bottle of cider, a loaf of bread, onions, garlic, ginger, a romanesco cauliflower and more. I staggered home like a yak without a yoke.

    Winter Squash: Take One
    One of the joys of autumn eating is winter squash. From butternut to spaghetti to pumpkin to acorn to Kabocha to hubbard to ambercup, winter squash vary widely and can be prepared in many ways. While pumpkin pie might be the first thing that comes to mind, there are plenty of main-course dishes that star winter squash. In the coming weeks, I’ll be cooking several winter squash in different ways. First up, is the slender, striped delicate. Because you can eat the skin, it’s a great candidate for stuffing
    Serves 6-8

    • 3 medium delicata squash, halved lengthwise and seeded
    • 1 cup quinoa
    • 1/4 cup dried cranberries
    • 2 cups water or vegetable stock
    • 1 tablespoon olive oil
    • 1 medium onion, chopped
    • 1 tablespoon ginger, chopped
    • 2 cloves garlic, minced
    • 1 bell pepper, diced
    • Dash of nutmeg
    • Dash of cinnamon
    • 2 tablespoons cilantro, chopped

Well, you could start from the comfort of your living room, by visiting NationalCapitalFarms.org. The Metropolitan Washington Council of Governments’ (MWCOG) Regional Agricultural Workgroup recently launched the site to promote and protect local agriculture in the metro DC area.

    With partners that include local governments, farmers, farmers markets and other nongovernmental organizations, the Workgroup seeks to establish and maintain a National Capital Farms (NCF) network to address issues of regional coordination and advocacy. It also functions as a forum for sharing agricultural info among members, the farm community, elected officials and citizens.
